That what I thought too. Until I had some. Done well, it's as good as any pizza you've ever had.

You can generalize and say that a white pizza is any pizza with no red sauce. I actually make a few different ones with a base layer of mozzerella and add toppings from there. The lack of red sauce keeps the acidity low and allows you to taste the less-robust toppings. One of my favorites to make is mozzerella & parmesian cheeses with thin-sliced tomatoes, artichoke hearts, and diced grilled chicken.

It sucks balls if you get it from a pizza place. I make my own and it's awesome. Fry about 5 moderate sized cloves of garlic in ~1/8" olive oil until medium brown, add it to a pound of ricotta cheese with ~2tsp oregano and ~1tsp black pepper, mix & spread evenly over dough in a normal-ish sized pan. Sprinkle grated parmesan or romano liberally over it, then mozzarella, then a spritz of olive oil. Bake it at 400 till the cheese is turning brown in spots.

Don't add meat of any kind, save that for red pizza or calzones. Broccoli works well with it though.

Yea, thats what I also see here in NYC. Even better..add some ground beef and tomato sauce for a "lasagna slice" which I can't find anymore.

Made it all the time when I had my pizza restaurant. I put ricotta cheese as base, then add parmesan cheese, feta cheese, fresh garlic, oregano, and mozzarella cheese. That was my version of white pizza. But my favorite pizza was made with pesto as sauce. Pesto sauce as base, then add broccoli, onions, sundried tomatoes, roasted red peppers, grilled chicken slices, and topped with mozzarella cheese. Simply awesome.
