Question POE question

From my understanding the POE standard is 48 volts, but is this something most switches let you change? Some POE devices often state lower voltages like 12 or 24. Ex: Unifi APs are 12 IIRC and some security cameras as well. Instead of having POE injectors everywhere which are very hard to organize in a rack I'm thinking of getting a POE switch but want to make sure I will actually be able to use it as POE and not be stuck using the injectors anyway.

I would probably go with a Dell switch as they are cheap on Ebay and I already have several so I'm familiar with them.
