Please recommend good wireless keyboard and mouse for Mac Mini

It doesn't have to match the silver and white cosmetics of the Mac Mini.

I would like mouse and keyboard that OS X recognizes automatically (no press key to left and right of shift keys every time you shift to different user, like my Saitek Eclipse).

I am a big fan of the new Apple Wireless Keyboard... As long as you can live without a number pad, it is the best IMO

As for a mouse, I've never cared for the Mighty Mouse, and I hate plugging in a usb receiver, so I went looking for the best Bluetooth Mouse. Tried a bunch of different models, and ended up sticking with the Kensington SlimBlade Trackball Bluetooth Mouse - http://us.kensington.com/html/13880.html

For me, its PERFECT. Stable bluetooth connection with excellent range, 360 degree trackball in the middle (just like the mighty mouse) which can be used to scroll (like normal), or you can press a button and it can act like a real trackball (takes over the mousing function). It REALLY helps when you take the mouse on the road, but on your Mac Mini it might not be as useful. Nevertheless, I love it.

Does OS X automatically recognize that bluetooth mouse using it's internal bluetooth antenna?

As far as I know, all non-Apple keyboard require calibration when connected. I'm curious why you need a wireless keyboard. I understand how useful wireless mice are, but I've never figured out why people need wireless keyboards.

Thinking of picking up another Mac Mini for my sister as as dvd player, cd player, and tv viewing (Slingplayer).

OS X makes my Saittek Eclipse keep recalibrating every time I switch user accounts. Is this true of all non-Apple keyboards?

Yep, it can even wake the computer from sleep

I have my keyboard in a desk drawer and I hate how it snags as I pull it out. Also, I love the portability and versatility.
