I am not a gamer but do like multi-tasking. System would be mainly used for video and photo editing, dvd encoding, internet and email.

CPU: E6400
MB: ASUS P5W DH Deluxe
Ram: Corsair XMS2 2GB PC2 6400
PSU: OCZ GameXStream 700W
Sound: Creative X-Fi Xtreme Music
Video: BFG Tech 7600GT
Cooling: Tuniq Tower 120

I'll be using my existing DVD-RW drives, Seagate HD's, and Case. Please post any comments you may have. I considered going with the E660 but it's another $100. Would the jump up in cache be worth it?

IMO, in this case the extra cache would only really be worth it if you are going to try to make a living with the box. If you are editing for a hobby etc then save your money for HD space. However, time is money and over the course of a heavy work year, the extra cache and CPU speed would likely pay for itself.
 
looks like a solid system, just some comments:

* you can compare the E6400 and E6600 here in the apps that are important to you to see if the extra performance @ stock speeds is worth it. however, don't forget the E6400 can OC very well, esp. w/ that HSF and RAM, so you can save money sticking with it.
* you could prob get away w/ a cheaper 965p mobo (even from asus), but that's personal preference; at that price you could also try the eVGA 680i mobo, which is supposed to give the best OCing performance for c2d
* i'm sure that OCZ is a solid PSU, although at that price range, i'd rather go with Seasonic or PC Power & Cooling (again, personal preference)
* if you aren't doing any gaming, you could save money and get a 7300gs or x1300


 
I think you have a solid build there. As brikis98 said, you might want to consider the eVGA 680I mobo. Great mobo and great for overclocking. You might not consider OCing now, but that's what I said when I first built my system. Now I have everything OC'd. Other than that, great set up. Enjoy it.

I very much want to, but I have never done it before and will need some guidance. Is there an easy read somewhere on how to do this?
