Well after a lot of research of OC guides and some help with some ppl on the forums I am proud to say I have overclocked my first CPU and it looks stable.
Prime95 Short FFT for 9HRS - Max temp 70c, avg 67c
I just want an experienced OCér to make sure none of these settings aren't too steep and may prematurely burn my chip. Also maybe suggest some tweaks.
Also are the timings okay? - because that is currently the most confusing aspect.

I am using a i7 920 (D0) @ 3.4GHZ W/ stock cooler & GB EX58-UD3R.
Also the ram is G SKILL (3 x 2GB) 1600 NQ.

QPI Link: X36
Uncore Freq: X18
BCLK: 170
PCI Ex: 101
Performance Enhanced: Standard
System Memory Multi: 8X
Vcore: 1.275V
QPI/VTT: 1.295V
IOH Core: 1.10V
Dram: 1.6V
QPI PLL: 1.10
CPU PLL: 1.80

Timings :- 8-8-8-18 2T @ 1333
(Could this be better?)

P.S. is it normal for the Core speed + QPI Link to fluctuate slightly.
i.e. 3399.8 - 3400 every now and again.

Your help would be greatly appreciated.

I'm no expert, but your voltages look fine to me.

The max values I've read about are:

1.35V for VTT
1.65V for RAM
~1.345-1.4V for CPU (air-cooling, seems that with air, you are more temp limited then voltage limited)

Also, your reading fluctuations are fine, that's normal.

Not tame for a first timer, it's quite a jump (~30%) over default and considering the current temperatures and stock cooler, would definitely not push the cpu any further.

I'm no i7 owner, but seems you should be able to push memory a bit more, if you were so inclined ;)

Cool. Well I am satisfied with the CPU speed. I don't want to go much higher than 3.4GHZ as I like the power consumption/performance ratio at this speed.

But as for the memory like I said it is a bit confusing.

It actually runs at 1360 8-8-8-18 2T. What would you tighten it too next?

I heard that Uncore Multi should be 2x or 2x+1 the RAM multi.

im honestly kinda worried about your QPI multi being so high.

36X is the stock link available in the bios. I was confused about this as well then I read that on the GB EX58 motherboards that QPI link is noted as doubled figure.
36X/2= 18X
Apparently since the QPI is listed as a GHZ number instead of a GT/s number.
