I wouldn't do it because I've never played or even heard of a game which allows two PSXs to go "HEAD TO HEAD."

It's mostly older Playstation games that support the link cable. Games that supported the link cable never really caught on because of the fact you needed 2 Playstations, 2 TVs, 2 copies of the game, etc. Sony got rid of the link cable port with the PSOne systems. A few of the games that support the link cable are:
