Is it possible to play a game like GT3 for the PS2 with two monitors? So when you're doing a 2player game each person can have their own seperate tv?

Cost effectively and in a way that looks good? No. To do two monitors with one PS2, you would need a device that can split the output of one signal onto two screens, then you would need to hook it up so it displays vertically, (since the screens are top/bottom) and THEN you would have to deal with the fact that it would be stretched to fit, so each screen would be twice as tall and ugly.

GT3 is one of the few games to use the iLink capability. Get two PS2s (probably have to be a bit older models) and two copies of the game and link them up. IIRC, there is a guide on gamefaqs.com on how to do this.

Can't you link together 2 of the newer style PS2's?

No. Not only will the slim not work, the previous new model (The + model with built-in IR sensor) will not either.
