Here are some games I have liked in the past:

Thief 1/2 (not 3)
Splinter Cell (played 1,2,3 on Xbox 1) (Is Double Agent for 360 any good?)
Ninja Gaiden 1 (getting 2 later)
Beyond Good and Evil
Mario 64
Banjo Kazooie/Tooie
Hitman series

So what else is out there for me?

Psychonauts (though it's not a 360 title but it's supported for BC)

Also, you have Banjo-Kazooie 3 to look forward to very soon in October.

I'll post more when they come to my mind.

I actually beat that game for PC. Great game! I think I might even have it for Xbox.

Assassin's Creed has all of what you are looking for. Though, it's stealth isn't hiding in the shadows as it is blending into the crowds and disappearing.

I really enjoyed the game but it is highly repetitive after a bit. Each chapter is pretty much the same, but I dunno, I just really liked the game. I loved climbing on top of the birds eye towers and looking at the city.

Have you tried Jet Grind Radio or JSRF on Xbox? You basically just skate around collecting paint cans and tagging things before time runs out. Doesn't sound like it'd be all that fun, but for some reason I can play it for hours.

If you have a PS2 give Odin Sphere, Ys, Alundra, Tomba!, and Legend of Mana a try. Not really platformers with the exception of Tomba!, but some great hack n slash adventure games.

I really need to pick up a Playstation 2. Can I get one for like $70-ish now?

EDIT: I've played Assasin Creed, I thought it was alright. I might give it another go.

I didn't really like JSRF for some reason, I'll try it again and see what it is like.

you'll have to wait a few months, but definitely check out Mirror's Edge. I'm so excited for that game. The controls are so smooth, it's the first first-person game that I actually will prefer playing with a controller.

Double Agent is pretty decent. I got bored with it at first, but I went back and enjoyed it through the end.
For platformers I would say pick up the Lego Star Wars Complete Saga and the Simpsons Game. Those are both alot of fun. Maybe Viva Pinata?

Action wise, Crackdown was really fun. I think quite a few folks looked it over. If you just play to have fun its a good game. I think some folks compared it too closely to GTA.
