Is it worth spending alittle more money to get a 10700k and z490 motherboard instead of getting a 7900x? I already have the x299 motherboard.

What board do you have? Look for a used 2066 chip. Lots of options and can always upgrade later when prices drop. That will give you an idea which to lean toward.
But if I was building new I would go AMD at this time; X570/B550.
