not very original. We had a local place called the Pink Taco about 10 years ago. They changed the name after about 6 months.

A pink taco at the Pink Taco is a corn tortilla stuffed with beans and topped with grilled chicken, salsa roja, pickled onions and avocado.

Gee...that's not even pink. Maybe they should put food coloring in the tortilla.
