Picked up a brisket this morning, it is going on the smoker tomorrow.

trimming it? what's your rub?

I bought it from Costco. It is a choice cut and it didn't really need much trimming. Rub is a combination of spices including lots of crushed pepper corns. I put a little olive oil on it and rubbed that in and then rubbed the spice mix in. Just the usual stuff, paprika, garlic powder, onion powder, ground sea salt, pepper, cayenne pepper, mustard powder, chili powder, etc.

I actually used a mortar and pestle to grind up the pepper.
