Photoshop colour is different from Illustrator colour

If I save a picture of a certain colour in illustrator, like RGB 50:50:50, and subsequently open the same image in photoshop, the colour shows up as 32:58:40 for instance.

How do I make sure the colour stays the same in my Adobe programs ?

Color management. I suggest searching and reading up on it; it's actually rather complicated. Basically you need to calibrate your monitor/scanner/printer, create color profiles, enable color management in the programs and use a consistent workflow.

I suspect the programs might be using different color spaces (sRGB vs AdobeRGB vs WideGamut, etc...) There's a couple threads up in the camera forum.
