I can't find any way to adjust the depth of field on my camera (Olympus C4000), so any tips about that are GREATLY appreciated.

After a quick peek at the specks...

"4000 Zoom's Olympus all-glass 6.5mm-19.5mm f2.8-f11 lens (the equivalent of 32-96mm in 35mm photography)"

Changing the aperture wll increase and decrease your DOF. Less DOF for portrait type shots, more DOF for landscapes, etc.

F2.8 at 80mm+ zoom will give you very little DOF.

I think it's time for a new camera - I was wondering why I couldn't adjust Aperture/DOF - it's because my damned arrow buttons don't work anymore.
