Performance Monitor

I am looking to utilize Performance Monitor on my 2K server. What is the best way to use it?

Depends on what you need to monitor.

I like to export the information to a log file and then build graphs from that file. Makes it easier to read for all the higher-ups when there are pretty colors.

Well, I want to verify that my server is running at a low capacity so I can consolidate network appilcations. I have so many servers and I want to get rid of some. So, with that in mind, what would be a good setup, in performance monitor in win 2K server, to see whether my servers can handle more of a load? Thank you.
