I had 3 muffins. I'm glad that Nikefido had to be too good for everyone and not show up. While I would have liked some rice pudding, that just means more nut cake for breakfast.

Thanks!! It's my Mom's recipe, and it's really easy to make:

Apple Nut Cake

3 eggs
1 cup sugar
1/2 cup oil
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1 dash salt
5 apples, sliced
1 cup walnuts

Blend first 3, mix second 4, combine those, mix in apples and nuts, in greased 9x13 at 350, 45-1hr, but check in 30 minutes.

(I doubled it, and used 1 8x8 pan and 18 muffins)

I also add more nuts than that, but if you don't like nuts you can omit them all together. I have a friend who is allergic to nuts, so I would make one batch with lots of nuts and one with none. You can chop the nuts up if you want, the same consistency as what you'd put in cookies. The apples can be cored and sliced in a salad shooter if you have one. It is much easier that way, and not as painful as slicing them one at a time.
