edamame as served in sushi places is a california invention by sushi bars that wanted a bar food, but not pretzel mix.

To further add to the story, I'm pretty sure I read on http://www.letsmakeamountainoutofamolehill.com that the school secretly found and hired a former Japanese soldier from WW2 to cook today's meal.
