PEANUT BUTTER RICE KRISPIES TREATS



Amount Measure Ingredient -- Preparation Method

3 tablespoons margarine
1 package (10-oz) regular marshmallows (about 40)
6 cups Rice Krispies cereal
1/2 cup peanut butter
nonstick spray coating

Melt margarine in large saucepan over low heat. Add marshmallows and
stir until completely melted. Remove from heat. Stir in peanut butter,
mixing until smooth. Add Rice Krispies. Stir until well coated. Using
buttered spatula or waxed paper, press mixture into a 3-quart rectangular
pan coated with cooking spray. Cut in 2-inch squares when cool.
Microwave directions: In large microwave-safe bowl, microwave margarine
and marshmallows at HIGH 1 minute longer. Stir until smooth. Add
cereal. Stir until well coated. Press into pan as directed. Makes 24
squares.
 
We call them (no idea why) Scotcharoos. I think because the frosting was made with butterscotch chips (but we use chocolate chips). Here's my recipe.

1 cup sugar
1 cip Dark or Light Karo Syrup
1 Cup Peanut Butter
6 cups Rice Krispies
2 cups Chocoalte chips (or 1 cup chocolate, 1 cup butterscotch)

Combine Sugare and syrup in a 3 quart sauvepan. Cook over medium heat stirring frequently until the mixture begins to bubble. Remove from heat and stir in peanut butter and mix well. Then add Rice Krispies and stire until well mixed. Pat mixture in a greased 13"x9" pan. Melt chips in double boiler and spread over mixture in pan. Cool until firm and cut into squares.


MMmmmmm I coudl eat the whole damn pan of these things. Only problem is the pan you cook it in gets pretty damn cakes with stuff and cleaning it can be a b!tch if you don't do it right away and you let everything cool.
