I need to edit a couple of PDF's (edit both text and create/edit fields) in the document. I do not want to pay an arm and a leg for Acrobat.

What do you guys recommend?
 
Try a Linux Live CD, open the doc in it and edit and resave. Make sure to mount your windows partition where the document is installed.
 
PDFill pdf editor, I believe its $20. They have a trial version, but it places a watermark when you save the changes, but you can check out the various features.
