....why should one bother about buying a particular stepping of
Barton 2500+ ? (like AQZFA or AQYFA ?).
Aren' they ALL multiplier locked ? (at least the new ones ?)
Or it's because it's easier for some stepping to reach 200 FSB ?

Yes, basically all the new ones are locked. But there are certain steppings that are said to reach 200 FSB more likely than others.
