Overclocking e4400 and temps

Okay so I just got my computer setup. I have the following specs:

Gigabyte P35-ds3r mobo
e4400
2gb gskill ram
Scythe ninja w/2 scythe 120mm silent fans
p180
Now, I have voltage on cpu at 1.375. Computer seems stable (orthos) at 3.2 ghz with divider 2 for ram so ram is running at 800. Now my gigabyte mobo's cpu temp seems to clearly be wrong. The temperature actually seems to fluctuate not with actual temp but with cpu usage (100% 55C idle 29C). So I don't know how I should go about this. Should I ignore the readings or what?

EDIT: Unclear on the temp a bit, what I mean is that the temperature increase is very fast when going to load and very fast when cooling down as well so it doesn't seem to be a very accurate sensor.
 
okay this is funky. now using coretemp, it seems to indicate that my cpu temp is 69C with a tjunction of 100. I thought C2Ds had tjunctions of 85???
 
sweet so my temps are good. Now another problem. I have in my bios set the voltage to around 1.5 but stupid cpuz only sees it as about 1.31. Why is that so? Coretemp seems to see 1.325
 
C1E and EIST may be on in BIOS. These settings will lower voltage and core speed when the CPU is idling. Run Orthos and Vcore should go up to default value.
 
That sounds about right my 4400 on the same board running at 3.2GHz with default voltage idle temp is around 27-29c.
I haven't stressed it so I don't know what it is under load.
 
I agree with Serpent, C1E and EIST tend to monkey around with overclock voltage. I turned them off in my bios to keep things simple while overclocking.
The other reason you're core voltage might be lower than the value you'd like because of the vdroop, in which case there's not much to be done about it.
