Outlook 2003 not saving contacts

It's just occurred to me that Outlook is not saving new people to Contacts. It's supposed to add a person that I correspond with to the Contacts list, but has not. So does anyone know where these contacts are going? Because if I type their name, Outlook does autofill it in for me.

I ran the scanpst.exe tool but it did nothing to fix contacts.
 
Outlook stores "Autocomplete" lists in the local "application data" settings on your computer - so if you have previously emailed "joe.bloggs@hotmail.com", in the future as soon as you type in J... it will suggest that person from the Autocomplete list.

If you load your "address book" do you have a drop down list of various contacts? (i.e -> Contacts, Global Address, etc) it may be that it is adding them to a list which is not being displayed by default in your address book.
