Yes. Applications on OS X are "Packages". They appear as one file in the UI, but they are actually folders.

Control-Click (or right click) an application, and select "Show package contents".

If you get into the resources and open the .nib files, you can rearrange the interface (note that it only changes the layout for language that you edit, and that you shouldn't delete or add widgets coz you will destroy the program in that language). You can change the images too. It's fun stuff.
