with the depth of travel indicated in the video seems like it would have to be some sort of scissor switch.

it feels like there is an opportunity to undercut them by making an plastic overlay with simple bowed flat springs and clear keys with capacitive reacting material on the bottom that would attach to a tablet and function similarly. or individual key modules that you could rearrange like the ergodex.
