Is it possible to create your own keyboard shortcut combos? Seems like I can only pick them from a list.

Also, Ctrl+Shift+P and Ctrl+Shift+B are god damned stupid for sub/superscript.

Just open any of the OpenOffice applications and in the Help seek "shortcut"

I did that for you in OO Write, it tells you how to do what you asked.
