Open With problem in Windows 2000

I've always been able to do this but right now I'm stymied.

I use a freeware text editor called Metapad. It's a Notepad.exe substitute. Per the program creator's intentions (suggestions), I rename notepad.exe to notepad_ms.exe and rename metapad.exe as notepad.exe. To do this I have to rename the versions of notepad.exe in \system32 and I think one other place. I configured my OS (Windows 2000) to open .txt files in my new notepad.exe. I have shortcuts to the E:\WINNT\notepad.exe (Metapad) and E:\WINNT\notepad_ms.exe (Notepad) in my Send To folder, so I can optionally open a text file in either editor (I name the shortcuts Metapad and Notepad to keep things clear). I did this and everything was working fine. Today I have problems I can't seem to straighten out:

When I double click on a .txt file, it opens in the old Windows notepad.exe, and in the title bar it says "notepad."

I can open a text file by using the Send To context menu item and choosing Metapad (which is E:\WINNT\notepad.exe [Metapad]).

If I choose the Open With item on the context menu for .txt files I am given this choice:

Notepad
Metapad
Choose Program

Notepad opens in the old Windows Notepad
Metapad gives an error message:
-------------------------------------
<the full path to the .txt file I'm trying to open + the file name> is not a valid Win32 application.

OK
-------------------------------------

If I go Open With, Choose Program and check the checkbox for Always Open With this Program, and browse to the Metapad program (E:\WINNT\notepad.exe), the file opens in Metapad fine. But if I close it and then reopen it by double clicking on it, it doesn't open in Metapad, but instead in Notepad. Can anyone shed some light on this situation? Thank you!

Well, checking I see that the old 50 kb notepad.exe is the one that was in \system32, so replacing that with metapad.exe renamed notepad.exe has resolved most of the problem - the default program for .txt files is now the 89 kb metapad. However, I still have two programs in Open With for .txt files and the "Metapad" one still gives that weird error saying not a valid Win32 program. What's with that?
