That's either complete bs or he's a complete moron. There's nothing magical about water. You can get it analyzed for mineral content and have the exact same customized for your business if that's what you choose. A lot of companies do this, especially coffee shops, tea houses, etc.

I know it's romantic to think, "NYC pizza is great because of the water", but seriously.
