One 2gb stick

Would it be safe to run one of these on this motherboard? Right Here

I was told you can only run at least 2 sticks of ram at a time, but I know my friend was running with one 512 stick. I am just confirming I didn't lose my mind.
 
dual channel will give you double the bandwidth as far as throughput goes. Whether you see any real gains depends on what your looking for. Also, I'm not sure whether this is the case now, but it used to be that AMD processors saw no advantages to dual-channel memory. Intel however did. This was due to the memory management being done by the AMD processors.

Take note that if you want to upgrade to 4gb, you will need ot have a 64-bit OS, otherwise you'll hit a 3-3.5gb barrier.
