Once potatoes start to sprout, are they still safe to eat?

Seems I recall hearing something about the sprouts being poisonous. Is that true? Of course I would peel them past the sprouts, but still.

yes. cut off the 'eyes and make sure there is no black in the potato. if there is... cut that out, too.

if the potato is soft and wrinkly, it is past its prime.

you dont eat the eyes. you cut them out, throw them away and eat the rest of the potato.

Potatoes CAN be toxic, if eaten when spoiled, or if you eat a crapload of them at once. Just carve out the bad parts and you'll be fine.
