a heavy boil is a rolling boil, when the water is bubbling nice and fast, as opposed to a simmer, where there are few, smaller, slower bubbles

Yes! I had these when I went camping a couple of months ago with my g/f and her friends. I must say, it was pretty good. I recommend it. Very easy to make! WOOT.

Just like the comment says...wouldn't it be bad to boil a plastic bag for 5 minutes and then eat out of it? I'll stick to my normal omelets :p

Yes, but don't put the whole egg into the bag like that if you like your omelettes a bit undercooked or are feeding people w/ weak immune systems. If I'm not mistaken, the bulk of the salmonella (and the chances really are small, but nonetheless) are on the shell.

And this is coming from someone who is not paranoid about food-borne illness, just look me up in most of the cooking threads!

Works great if you're out backpacking - start the campfire in the morning, put a pot of water onto it to boil for coffee, while the water's boiling (boil a few minutes to kill any parasites in the water) toss in your omelet.

Personally, at home I wouldn't do it that way.
Add a tablespoon of bacon grease to large square pan
heat it up
while it's heating, dice up some leftover ribeye; use the leaner portion
toss that into the pan
while that's heating up, scramble 5 or 6 eggs in a bowl
remove meat from pan
pour egg into pan
cook slowly until it's nearly cooked through - slowly enough that the bottom doesn't become brown
sprinkle the meat on top of the nearly cooked egg mixture, add some shredded cheddar cheese.
fold over 1/3 from the left and from the right; let it heat for another minute, flip it, and another minute to make sure it's cooked through.

Enjoy. I also prefer to have green peppers cooked with the meat, but never seem to have them on hand.

I didn't actually read the recipe, but my SO cooks them in a bag every once in awhile. She uses the heavier freezer bags - mix omelette, throw it in the bag, and boil it for 10 minutes or so (may be off on time). Its pretty good.

The recipe does tell you to crack the eggs into the bag, not put them in there, LOL. I don't know how else you plan on making it an omelet and not just "boiled egg covered in crap"

I've heard of this method used with the FoodSaver vacuum sealer - they made a bunch of omelets in bags, boiled them, and then cut them open to serve. Apparently it works pretty well!

The pic on the article looks like a guy holding an egg in a bag. If you're packing it to camp, I'd suggest that not be the preferred method of storage, at least not in the bag that you'll use to make the omelette.

That warning kinda scares me from trying it :)

My secret to making omelets is to do them on the lowest heat setting and covering the pan with a lid/plate. After a few minutes, you lift the cover/plate and you'll see the omelet all puffed up. Makes it nice and fluffy.

The local "House of Bagels" does this for all their egg bagel breakfasts. They don't use bags though. They use the disposable plastic containers in the microwave. Tastes like Chicken...

Yes, it's the entire meal; rarely a breakfast - usually a big lunch on the weekend, else a dinner. Altogether, I don't even think it's 12 ounces.

1) Don't boil plastic
2) Don't eat out of boiled plastic if you don't know the melting point
3) If wouldn't really be an omelet that way, it would be closer to scrambled eggs as the ingredients would be mixed in, not enclosed.
4) Are omelets really that hard to make the traditional way? It's not like making Peking Duck, if you can work a spatula you can make an omelet.

Seems kind of like a poor man's version of sous vide. Doesn't seem to make much sense with omelettes though. You want a bit of carmelization with an omelette. That's part of it's classic flavor.
