OK to use molex --> 8-pin power adapters?

I'm using a Seasonic 600HT (600W) power supply and it's only got 2 6-pin connectors. I'm thinking about getting one of the upcoming GTX295 cards (which requires a native 8-pin PEG) and I'd like to use the same PSU if possible, so would you guys recommend a molex to 8-pin adapter, or should I get a new PSU or...?

you don't need more anything else, just make sure you've got an adapter that supplies black (ground) on the top row and yellow (12V) on the bottom row. Some 8 pin adapters are for motherboard power and have the pins reversed. Actually, on the video 8 pin, the two extras are both ground, so that's all you need... to add two ground wires.

You may get the adaptors necessary when you purchase the card. For instance, BFG typically includes the necessary adaptors. The BFG GTX 280 comes with a two 6-pin to one 8-pin adaptor, and a two molex to one 6-pin adaptor. With your Seasonic's two 6-pin, you would have to use both adaptors.

What's the purpose of the 8-pin connector then if a 6-pin feed is providing sufficient juice? Is there any disadvantage to using an adapter vs a true 8-pin setup?

6 pin is only rated for 75W. 8 pin is rated for 150W.

So you risk underpowering the card if you don't have a 6 + 8 pin capable PSU? Or are you overpowering the 6-to-8 pin feed? Sorry, I suck when it comes to electricity.

I think maybe you mis-read what he said? He said that you have to use TWO 6-pin connectors to power ONE 8-pin connector. Or maybe I misunderstand what you're asking =P
