I would never run a car that sees rain or especially road salt without the undertrays. No need for that crap to get even more places where it can start rusting things away.

Then again my cars are 15 and 19 years old and I expect to keep them until I can’t get gasoline.
 
As long as you can find the part -- either OEM or aftermarket - replace it. For something like that, I'd even check JC Whitney. I used to get new factory fenders for my Hondas there.
