I have a single 8GB stick I want to run in a MSI B360M board for simple office use. Performance is not a real concern. Any problem running a single stick of Crucial 2400?

You'd only notice if you try and game on it.

Otherwise, no big deal. Single channel DDR4-2400 provides almost as much bandwidth as dual channel DDR3-1333. (19.2GB/s vs. 21.3GB/s). Of course, if you could find some cheap 2933/3000/3200MHz, that'd help. Also with latency.

It will work. You take a slight performance hit. A lot depends on how many windows you typically are using. I like to use a 2 x 8 GB kit Myself even if it is only for mostly browsing. If you ever want to use your PC with a 4K TV More RAM and or a video card with HDMI 2.0 might come in handy. It is often costly to upgrade RAM later on down the road. Of course everything costs money.
