Ok, so how do you make that white queso dip they serve at Mexican restaurants. . .

I found recipes online using a special hard to get 'asadero' cheese. You can't buy that where I'm at, and I doubt they are using this cheese in bulk at restaurants. . .

Where are you located? A part of the USA without Mexican grocery stores or at least one that doesn't cater to the immigrants? WOW!

I don't have a recipe, but since it's probably just like a white gravy with chese, spices and some peppers... or maybe more like a cream soup base with cheese, spice and peppers.

Have you checked all the grocery stores in your area? I'm pretty sure I've seen it even at non-Mexican oriented grocery stores. Not Dillions and larger chains like that, but smaller regional or locally owned stores might stock it.

Dillons carries it around here. So does Price Chopper. This is in Kansas.

It's just velveeta and rotel. (diced up tomatoes and green chilis) Sometimes they put chili in it.

I used to have a fat girlfriend and she loved that stuff....so I researched it by asking the deli at a grocery store what the mexican folks used for Queso...they told me.

queso == cheese, so you're sort of right, he's just talking about a specific white cheese dip.

We get it at the local international market, but you can make such a dip with a lot of different (and much better tasting, imo) cheese. Just pick a cheese with a proper fat content (i.e. no low-fat cheese) and heat it slowly. Grade or cut into small chunks before melting.

I like making a dip out of vintage Irish cheddars. Fantastic.

Asadero cheese is a creamy white stringy Mexican cheese . It's fairly expensive, so you can substitute muenster and/or farmer's cheese and get a similar flavor.

ive never seen a mexiacn grocery store, or a asian one or any other non american one for that matter
