The more you eat, the more you crave. Smoked some more baby backs along with salmon on my new Weber Smokey Mountain using hickory. It's awesome. Stuff is so good that I can't see myself eating at local BBQ joints any longer. Did the 3-2-1 foil method on the ribs and brined the salmon. If I was retired, I would fish and smoke all the time.

I know...I've been firing up the pit every weekend :) I don't precook anything---ALL BBQ takes at least 4 hours to cook and it's got to start raw for me!!!

Welcome to the club :thumbsup: :D I got hooked last summer. I grill at least once a week now, almost daily with my George Foreman (not quite the same, but works for busy days). I don't really like eating out anymore because I can cook waaaaaaay better food at home for a lot cheaper.

Yep, only you can do it during the daytime, you don't NOT eat, and the neighbors all want to hang out for all the right reasons. :thumbsup:
Bummer for me is no "real"salmon this year. It's all gotta come from a store.... unless I go up to Alaska.

Here in eastern norf cakalacky our BBQ comes from a pig, and it's chopped/pulled and dripping in a vinegar sauce with a little texas pete on the side. throw in some deep fried hushpuppies, some slaw, some brunswick stew, and some ice cold sweet sweet tea, and you's good to go!

Uh, no.

I've lived all over the U.S. North Carolina is the ONLY place I know that soaks pulled meat in vinegar and tabasco sauce and calls it "BBQ". I'm not saying that its bad, I actually like the taste, but couldn't you guys have used a name that wasn't already taken? :p

There's at least 5 styles, but yeah, the Carolinas are the only place in the US that does that.
