They are the smaller chop style pork loin. I am plannng on sauting them in butter and a bit of olive oil. What type of seasonings should I add? I've not had much experience with the world of pork.

Heeeeppp meh!!

Lard > butter
Cut them to 1" cubes, and simmer it in lard for an hr in low heat.
Then use a fork and shred them up.
Buy small corn tortillas, and put in onions and cilantro, and guacamole
And you get tasty carnitas 🙂

damn, I don't have any of that! I shall remember that for next time though. 😀

Looks like I will sprinkle some lemon pepper and maybe some dill weed on them.

Brine in applecider vinegar, salt, peppercorns and brown sugar mixture in fridge for 2 hours.
Stuff with cornbread, chopped walnuts, dried cranberry, golden raisen, buttermilk mixture. Bake.

My mom used to make this all the time also chinese style
She would marinate it with soysauce, rice wine, and corn starch. Then after you're done mixing all those into small strips of the pork loin, you would drench it with corn oil. This would lock in the flavor and the juices of the meat. Then leave it in the fridge overnight. Next day, you take it out and you stir fry it. You could stir fry it with vegetables. You could boil some noodles and make chow mien, or you can eat it with rice. Good stuff..
pic of chow mien i made
