I got an itunes gift card for xmas, bought about $10 worth of stuff with it ($25 card) and I get this email from apple/itunes...

from: do_not_reply@apple.com
subject: Your receipt #.......... [those are #'s]
mail has the itunes logo and says...

Billed to: my name and adress
then it lists all the songs and videos i bougth

pretty sure it seems to be charged properly in itunes
the little box next to my user name/email adress said $25 after i entered the gift card and went down accordingly with every purchase
 
So... you got a reciept. What's the big deal? It didn't charge your account, but it's a form email that says "billed". Get over it.
 
It's called a receipt, so they and you have written proof that you spent the money on the giftcard.
