I'm going to put shrimp, chicken, smoked sausage (I don't like andouille sausage, which is what you're supposed to use),beans, okra, onions, celery, hot sauce...and I'm gonna eat it all up! :D

EDIT:
Aw MAN it was good!!!

Can't wait till lunch for leftovers.

I'm puzzled by her209's reply.

Gumbo rocks. We NEVER put beans in it, though. Or celery. It's usually just the roux, plus chicken, shrimp, sausage, okra, and onions and garlic, served over rice. Of course, the beauty of the gumbo is that you can put anything you want in it.

Try some gumbo file on top when you serve it.

I agree. No beans. But celery is part of the trinity (celery, belll pepper, onion)

Red beans are as cajun as you can get! I like the thickening flavor they add. Anyway, it'll be done in an hour....can't wait.

Hmm, Toledo is only 45 minutes away.

Too bad I'm multi-tasking my altered states of consciousness.

Anything with a dark roux, onions, peppers, and celery, can't be bad.

Hell yeah. At work a couple years ago, the crew made a seafood gumbo. It had oysters, crab, shrimp and some of the best duck sausage i've ever tasted. It was awesome.

As a person who is residing in Lousiana for over 20 years, I will have to say authentic gumbo is one of the best food on earth.
