I have been assigned the task of preparing a side dish and stuffing was specified.

Lets hear your best recipes.

This is a super simple recipe that I'm sure everyone will love. I give this to everyone doing their first Thanksgiving meal, then they tend to tweak it to their liking every year.

Get two bags of Hillshire Farms bread crumbs (they're near the bread in your local grocery store), then pick up the following:

1-2 large carrots
1 stalk celery
1 lg sweet onion
1 8 oz fresh mushrooms (optional)
2-3 can of turkey broth (chicken is OK if you can't get turkey)
1 lb breakfast sausage
1 lb butter
Salt, pepper, poultry seasoning

Chop up the veggies into small pieces.

Crumble and brown the sausage and fry it. When it starts getting greasy, add the veggies and sautee until the onions become translucent.

In a large bowl, add the breadcrumbs, and pour the sausage/veggie mix on top (grease and all).

Add 2 tbs poultry seasoning, 2 tsp salt, and a couple of dashes of thyme you have it on hand.

Add 1 stick melted butter

Add 2 cans of turkey broth. Mix it up until the breadcrumbs start to break down. Add the 3rd can if needed. The consistancy should be that of a "wet paper towel" :) You can add plain water if you need more moisture and run out of broth.

Bake it for about 1 hour (covered) at 350. It should puff up and look really nice.

If you were going to stuff a turkey with this, you would make it a bit dryer and then stuff the bird 3/4 full.

Trying oyster stuffing this year. In all honesty the recipie on the perpride farms stuffing bread crumbs is awesome, just add another stick of butter and be sure to use turkey stock and a little extra poultry seasoning.

* 4 tablespoons unsalted butter, melted

Directions

1. Preheat oven to 350 degree F (175 degree C). Spread the white and whole wheat bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes to a large bowl.
2. In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.
3. Pour sausage mixture over bread in bowl. Mix in chopped apples, dried cranberries, parsley, and liver. Drizzle with turkey stock and melted butter, and mix lightly. Spoon into turkey to loosely fill.

Made this the other night and it turned out great. I omitted the liver, and used fresh herbs instead (be sure to double the amounts of herbs if you use fresh.) Also did not stuff it in a bird, just baked it covered in a 13x9" dish @ 350 for 30 minutes.

Great recipe - its the standard but I would not use bread crumbs - just a typo I 'm sure - but use cubed stuffing in a bag.
I would also not put any carrots in the stuffing.
I would add 2-3 stalks celery - fine dice
I would forego the sweet onion and use a standard yellow onion
1lb butter? Most recipes call for 1 stick (1/4lb) Use butter - not margarine.
Chicken or Turkey broth - add enough to where you are satisfied with the moisture level. Some people like drier stuffing. I only use 1-can.

Drain off the grease as the pork sausage is really fatty. Don't brown the onion/celery mix but at a low temp sweat the veggies.

You want to use breakfast sausage like Jimmy Dean as it contains a lot of seasoning that will help flavor the stuffing.

I have never cooked a turkey before, nor much cooking for that matter, so what's the best site for a turkey prep. tutorial for an idiot like me? I talking about step by step instructions including pictures.

Ingredients
2 teaspoons unsalted butter
1 pint shucked oysters and their liquor
2 tablespoons vegetable oil
2 cups chopped yellow onions
1 cup chopped green bell peppers
1 cup chopped celery
1 1/2 teaspoons salt
1/2 teaspoon cayenne
3 bay leaves
1 tablespoon minced garlic
1/4 cup finely chopped parsley
1 cup water
1/4 cup chopped green onions
4 cups 1-inch cubes French bread or homemade-style white bread
1/3 cup freshly grated Parmesan
Directions
Preheat oven to 375 degrees F. Butter a 9 by 11-inch baking pan with the butter and set aside.

Drain the oysters, reserving the oyster liquor. Set aside.

Heat the oil in a skillet over medium-high heat. Add the onions, bell peppers, celery, salt, and cayenne and saute for 5 minutes, or until soft. Add the bay leaves, garlic, and parsley, and saute for 1 minute. Add the water and cook for 2 to 3 minutes, stirring constantly. Add the green onions, oyster liquor, and the bread cubes. Stir to mix well, and remove from the heat.

In a large mixing bowl, combine the bread and vegetable mixture with the oysters and cheese. Stir with a wooden spoon to mix thoroughly. Pour the mixture into the prepared baking pan and bake for 1 hour, or until bubbly and golden brown.

Remove the bay leaves before serving.
