I'll be getting a 64bit AMD very soon, and I'd like to know how these chips overclock.

This is hardly *Official* as people have been buying these ever since they were released over a year ago. 🙂 There are multiple threads on the forums about this, try the Search feature.
 
seems like most peoples OCs are upp to 2.4-2.6 GHz. To achieve more than that i believe watercooling is a nessity(sp?)

Watercooling did nothing for my overclock even though temps went down by almost 20C over air. Ultimate OC went up a little (can run most benchies at 2.6ghz with 1.825v), but prime95 stable stayed the same at 2.5ghz @ 1.76v with my old 7 month old CO core (nuetered clawhammer) A64 3000+
 
On my A64 3200+ (Newcastle 2,200 MHZ default) with the K8N Neo I got it @ 2,464 MHZ (11 x 224) Prime95 stable with stock fan, that's at least 12% more speed. Stopped Prime95 after 20 minutes, but I've been running Far Cry for hours without problems.

Some Benchmarks:

Super PI (1M) = 38 Sec.
Sandra (CPU Arithmetic) = 10508MIPS | 3857FPU / 5028 MFLOPS
Sandra (Memory Bandwidth) = 3360 / 3361
 
Mobile 3000+ (1.8GHz, 1MB L2) @ 2.0GHz in an eMachines M6805, 222HTT. It'd go higher but there's no AGP\PCI lock.
