Odd exchange folder weirdness on mobile device!

Backstory:

A couple of months ago Sandy destroyed my companys exchange 2003 server. In an emergency I had a company host our email until I could build a new exchange box. I built an exchange 2010 server and all of our emails are working. Heres the weird part. My boss (naturally the boss' email would be the problem) has an iphone and ipad and his email has a bunch of folders in it. These folders display fine in outlook and fine on the webmail OWA but they dont display on any idevice or mobile device. What does display is the hosted email folder structure that is not active anymore. All other email accounts display fine with the existing exchange info but his does not. Any idead WTF is going on?
 
So, I set up his account on an android device and it can see his other folders and it doesnt see his prior hosted email folders. Wtf is going on? Why would an idevice see folders that are not on our exchange but from a non-existent hosted email? The configuration is the same for either device type.
 
Sounds like his devices might still be connected to the old Hosted Exchange system.

IIRC, iOS devices can join to multiple Exchange organizations. He may be clicking on the wrong one.

I have set up his account on my iphone and I get the same results. I use the settings I created on the exchange server but I can only see the folders that were created on the hosted email. I use my settings and I get the correct structure. I notified the company that hosted our email briefly to see if they left something on on their end. Oddly, if i set up his account on an android device his folders come up correctly using the same credentials.
