What is the real world performance gain by going to a vertex 3 as supposed to using a Kingston? Say if I was transferring files from one hd to another, would I not be constrained by the slowness of the other drive if it were not an ssd?
I guess it would work for me since I tend to run a lot of project builds/compilations (c++) and the I/O can be intensive but I'm just trying to find out whether paying double is worth it.
I'm currently using a 40gb intel ssd and it seems to be quite fast.

Write performance on the new Sandforce Chip is great, even with an older SATA controller. If you have a SATA 3 controller, its supposed to be amazing.

If you have a multi-core CPU and are running parallel compile threads the IOPs on a SF drive are entirely worth it. I have a server running Gentoo with a Q6600 and Vertex2 60GB, with 5 parallel compile threads this thing flies.

FYI, I've done 2 of there rebates, 1 for a 30GB and 2 for 96GB, they are very speedy in processing rebates.
