OCing Question

Okay; I've got some OCZ Reaper that runs at 2.1V stock. This had to be set in the BIOS with the RAM out of the computer in order to boot to BIOS. Now, if I get to an unstable OC and have to reset CMOS, will I have to take the RAM out and reset the voltage in the BIOS?

Wait a sec... why did you have to get into the bios in the first place with the dimms out of the machine?

I have OCZ reaper rated 800MHz 4-4-4-15 2T @ 2.1V but it will run at 1.8V as stated in the SPD.

Your ram should run 800MHz 5-5-5-15 @ 1.8V no problem. You shouldn't need to have different ram in the machine to set 2.1V. The 2.1V are only required to run the tighter timmings.
