I'm really a newbie to this kind of thing, so please excuse my ignorance. I have a celeron 500, and Tyan trinity 400, s1854. The manual for my mobo says it autodects the speed of my cpu, so my question is: can I overclock this processor, if so, how do I do this?

You can only overclock your processor by increasing the Front Side Bus. Multipliers are locked on Intel processors.

Unfortunately, you won't be able to overclock your processor very far, as it is manufactured at the top of the .25 micron process. 562MHz (7.5 x 75) is a realistic target....anything higher and you will need to increase the voltage, cooling, or just be very lucky.

I would sell the 500. They don't OC worth a darn. You should get $50 for it if you include shipping. Get a slotket for FCPGA to PPGA with adjustable voltage and a 566 Celeron II. Both should run you about $80. You should get 850mhz out of the Celery and although it's not a P3 or Duron/Tbird, I'm sure you'll be very happy with the result.
