In the performance setting, is a small check box, below the main box, that says "show advanced settings". Check that, and then apply and it will be in with the AA/AF settings and whatnot.
I just installed ForceWare 61.77 for my 6800 Ultra and installed coolbits, now with coolbits it doesn't show 16x Anisotropic anymore only 8x, is there a version of coolbits for Driver 61.77?

Coolbits has been known to "remove" vsync and 16x ansio. Its not the same for every driver version. So, instead of downloading coolbits and applying it to your registry. Just do the reg edit yourself. Heres a link. Link
