I've just ordered:

6*80 mm GlobalWin (30 CFM, 36 dBa each, RPM-signal)
1*120 mm GlobalWin (108 CFM, 42 dBa, RPM signal)

1*92 mm Papst (35,9 CFM, 23 dBa) This is bought to build in to my Enermax 330 W PSU, so no RPM signal needed.

I'm wondering whether I should buy a Digital Doc5 for all these fans?!?!?

And if, where is it possible to buy one in Europe (preferrably Denmark)?

Wow- 120 mm @ 42 dBa . . . you're gonna hear that lawn mower. (= DigDoc5 is a good toy if you like monitoring how fast all your fans are turning. And unless they added a speed control to the fan, I think more than anything you need a fan-bay or something that can slow down your fans when you're idling. Otherwise, you might as well ditch your speakers 'cuz all you'll be hearing is your computer. :) exaggeration, I know.

Hmmm, AFAIK Digital Doc5 is also capable of controlling the fan speed, right?

I think you're capable of controlling it by RPM or one of the 8 included thermal probes!?!?!

Digital Doc 5 allows you to set a temperature at which your fans turn on, so you can keep the case quiet except during peak periods. You can also override this to turn on all fans if you want. Just bought this earlier this week and can't wait to try it out.
