People overcook them. Scrub the skin, cut it up, steam quickly, add a little butter, sugar, salt, and dill. Yum!

they are a great vegetable for stews, soups, pasta, stir fry, etc...

I grew one that must have been 2 and half feet long and about 8 inches wide. It was hidden under the huge leaves. I like to grow the bush variety so they don't take over the garden.
