The quick and cheaply-made casserole can feed a lot of people with just a few ingredients and is easy to freeze.

I make it all the time. It's basically creamy, cheesy potatoes with crushed cornflakes on top, so you get the crispy & the gooey all at once. It's pretty awesome lol. There's a bunch of ways to make it (and it goes by other names, such as cheesy potato casserole), but this one is super easy because it uses frozen hash brown cubes:

Basically just thaw the potatoes, stir everything together, and cover the top with butter-coated crushed cornflakes, then bake for 45 minutes.

I get where they're going with this, and am personally a big fan of easy-to-make comfort food. But holy shit who thought it was a good idea to call it that?

I think it's because it was a dish that was easy to make, could be made in bulk to feed a lot of people, and you could bring it to a funeral as a potluck sort of thing - comfort food.

I don't know how to say this without sounding like a moron, but all of the best funerals I've been to have been ones with great potlucks - you get good food & you get people together to talked about your family member or friend who passed away, it turns into a great last memory of them where you get together & eat comfort food & share memories about the deceased.

On that tangent, I remember seeing a video back in grade school about a guy who died from AIDS. He knew he was dying in advance, so he planned this huge party for his funeral - brought in all of his favorite foods & setup dozens of televisions with pre-recorded video messages & video clips from his time with his family & friends. It was super cool...I definitely don't want to have a sad funeral; not meaning to be narcissistic here, but I want people to celebrate my life, not get all mopey about it. Had a good run, peace out! lol.

Hellfire Pizza is really good too. Sadly, it all but impossible to figure out where they will be parked on any given day. :(

Same for my favorite local food truck - they do amazing pork belly sliders & deep-fried baby potatoes in duck fat with a fried egg on top. No freakin' idea where they'll be next :(

6 months after wife's death I hosted a sit down dinner for 140 at a fine Italian restaurant with open bar and order what you will. Way better than potluck and everyone had a chance to grieve beforehand and have a great day of memories. To be on topic: There were many potato choices. A Walmart was nearby.
