When using NOS in NFS Most Wanted it drops down and has to build back up. Is this because the bottle gets cold and the pressure drops? Or is it a game rule?

<--- Non driver here ;)

Oh and what kind of Mitsubishi (besides a zero hehe) goes over 200 mph?

The reason you can only use it in short bursts in reality is because the temperature shoots way up and if you use it too long the engine will asplode. Maybe the game is just reflecting this in a different way...

In real life, it just runs out. Never replenishes w/o a stop to your local filling station.

Once the bottle is empty, it's empty. Running a nitrous system past the point of when the pressure drops only makes your car run rich if it's a wet system, or nothing at all if it's a dry one.

Exactly. Think of the N2O as just another type of fuel, only this fuel supplements your existing gasoline to provide more oxygen for the engine to burn. You run out of fuel eventually
