Noob question - ram for ASUS P6X58D

I am building a new computer with the ASUS P6X58D mobo and i7-930 cpu (64-bit Win7).

Does it matter if I use 2 or 3 sticks of ram? I'm probably looking at getting 6 or 8 GB. Any recommendations?
