Friend says I shouldn't use the rough side of a sponge (the green side on the green and yellow sponge on it). He also says not to wash them right away because sudden temperature changes are also bad. Is that right?

Letting it cool down before washing it is a good idea. As for the sponge thing, I always thought that as long as you don't use a wire brush that will scrape off the coating, you'll be fine.

I think the green sponge part is ok.
No to dishwasher.
Yes, Let it cool slowly or you will warp the pan, and split the teflon from the pan.

You shouldn't use metal utensils, since that will scratch the teflon off. Try not to use the green side of the sponge. Any burnt food should come off with the sponge if you soak it in water for a little while.

Also, take care not to overheat it during cooking. This is also bad for the teflon coating.
(Overheating = oil is smoking)

no scrubbing. only soft sponge. no hard metal coooking tools. heat above 500f bad.. like leaving it on burner empty:p

that being said it doesnt matter that much. cheap pans are like 20 bucks. cheap pans tend to have slicker surfaces to boot. the expensive ones try to protect the teflon with all the grovin and pitting..defeating the slickness:p

If you leavea teflon pan on the stove with nothing in it, it actually gives off toxic fumes. It's been known to kill birds and such (happened to a friend of mine). So once you're done cooking, take it off the heat. Or if you are boiling water or something, make sure it doesn't all evaporate...

And a dishwasher shoudln't hurt it at all since it's just hot water. You just can't use anything like steel wool or something hard that can scratch the surface.

I hear that teflon pans are a bad thing. Apparently Teflon isn't good for your innards. I have an engineer friend that trashed all his after some of his military research indicated that it's bad.

What you need is one of those industrial wire brushes that fits into the end of an electric drill. Make sure you have the drill on at max speed & torque and give it lots of pressure ;)

Either that or use a sponge. I find washing the pan immediately after I've eaten the food I've cooked with it prevents anything sticking to it so you never have to scrub at it at all. By the time I've eaten it's plenty cool enough, but nothing has dried enough to stick to the pan. Use hot water and soap, you shouldn't even need to use the green side of the sponge as all the grime should wipe off dead easy...

Also, you need to cook me a hero sandwich in order to test this theory: baguette, steak cooked in garlic and chopped thinly with grissle removed, salad, buttered bread (no wussy sunflour spreads: proper butter) and coated in a generous helping of medium to mature chedder, finely grated.

Cheers.

Edit: sorry, bored at work and going a bit crazy....

well..and nothing should *stick* to it in the first place. if its dried, soak in water. it'll come off once its absorbed enough.

makes me think u ruined the coating long ago if u even consider using the mesh scrubber

Always use a heavy duty plastic spatula rather than metal. Even the slightest amount of force with a metal utensil will scratch the hell out of Teflon and subsequently, a lot of the cheaper skillets rust really easily after that (like mine).

Or you could use wooden tools, instead of those plastic spatula.
We even used wood to clean rust from rifles, so it can't be that bad ;)

:) Wow... Military research and all... I'm sure the teflon coated projectiles are VERY bad for your health!
